This is an awesome recipe for those people who 'don't like fish' or are new to it. How do you make fish more appealing to those that are timid? Throw some bacon on it! Onion, tomatoes, garlic and bacon... the flavors in this are simple and delicious! Pair it with a veggie and your meal is complete.
I've got to give credit to my mom for inspiring this delicious recipe. Every time I visit, we spend at least half of our time in the kitchen (or the pool, or the couch with a cocktail- really rough I know!!). It's always fun to play with a spiralizer and I love how fresh this salad is! Everything is raw so no heating up the kitchen. This is an awesome side for any meal, but you can also throw a protein on top and it can be the main event!
One of my absolute favorites!!! Way back when I was vegan (not the kind of vegan that just has soy processed everything but the kind who realized that there are tons and tons of unprocessed and delicious food options out there), I discovered this little recipe. I lost the original recipe long ago, but still make this salad over and over again. Perfect cold or at room temp. This salad doesn’t last too long in my house (as in I have to have a discussion with myself on portion control before making this goodness). Hopefully it’ll be a favorite in your house as well.
Alright… The sauce that makes up this delicious dish is not super duper healthy BUT I lightened it up a bit and throw in tons of veggies to make me feel better about it.
