Egg Salad Topped Avocado

No mayo needed in this egg salad!! Tangy and crunchy egg salad mounded on top of creamy goodness! This would be such a great lunch to make when you have you’re closest 10 girlfriends over as it is so easy to double or triple for however many people want to join. Also great for taking on the go…. No mayo and it comes together in a flash!

  • Prep: 10 mins
  • Yields: 2 stuffed avocado halves


1 avocado, pitted and halved

2 eggs, hard boiled and shells removed

1 celery stalk, chopped

1 tbsp parsley, chopped

1 tsp Dijon mustard

1 pinch salt

1 pinch freshly ground black pepper


1Roughly chop the hard boiled eggs.

2In a small bowl, combine eggs, celery, parsley and Dijon mustard. Season with salt and freshly ground black pepper and stir to combine.

3Before plating the avocado halves, turn them sideways and cut off a very small part of the bottom of the avocado skin. This method will help level the avocado so it doesn't slide around on the plate and lose all of the filling.

4Place avocado halves on plates. Pile the egg mixture onto the avocado halves evenly (if some spills off the side it will still taste great). Sprinkle finished stuffed avocados with salt and freshly ground pepper and enjoy!!
