Avocado Salsa Topped Chicken

When your boyfriend goes to the farm stand and gets pounds worth of avocados, tomatoes, and limes, you get a little creative on how to use them!! We loved this super fresh salsa combination over the spicy chicken. If you have to get your fingers a little dirty creating the perfect bite of tomato and avocado to top your chicken…. you know you’re doing it right!

4 small boneless, skinless chicken breasts

1 tsp chili powder

1/2 tsp cumin

1/4 tsp cayenne pepper

2 large roma tomatoes, roughly chopped

1 large avocado, pitted and largely diced

1/4 red onion, chopped

1 garlic clove, minced

1-2 lime

1 tsp salt

1 tbsp extra virgin olive oil


1Heat large skillet on medium.

2Lightly drizzle 1 tbsp extra virgin olive oil over the chicken and toss to coat evenly. Sprinkle chili powder, cumin, cayenne pepper, and salt to taste on chicken. Toss to evenly distribute seasonings.

3Add seasoned chicken to preheated skillet and cook on medium heat 4-5 minutes on each side (depending on the thickness of the chicken breasts) or until cooked through.

4While the chicken is cooking, combine tomatoes, red onion, garlic, juice of 1 lime and salt to taste in a medium bowl. Toss to combine the ingredients and set aside. I like to wait until the very end to add the avocado so that I don’t damage it combining everything and the avocado keeps its vibrant color.

5As soon as the chicken is finished cooking I toss the avocado in and gently combine it.

6Plate the chicken and top it with the delicious salsa mixture. Grab a fork and knife and dig in!
