Avocado Baked Egg

I am a bit of a Pinterest whore and I am seeing so many people trying this egg baked in the center of an avocado. I read all different recipes that have avocados cooked and the sound of it warmed has never appealed to me. And then I went to Costco and grabbed a bag of avocados. You know… the giant avocados that inevitably are all ripe at the exact same time. Needless to say I needed a reason to use all of them so I decided to finally try it out. Let me tell you… it was delightful! This would be a nice fancier looking breakfast to do for company and it’s pretty much as easy to do for 8 as it is to do for just 2 people. I love the food that looks impressive to my company but it easy for me!

Ingredients

2 Avacoados

4 Eggs

1/2 tsp Salt

1/2 tsp Freshly Ground Black Pepper

1 tbsp Cilantro - Chopped

1 Lime

1 dash Sriracha

Directions

1Preheat oven to 400 degrees.

2Halve the avocados and remove the pits.

3Spray a medium sized baking sheet with non stick cooking spray and set aside.

4With each half, scoop out a little bit of the avocado to fit the entire egg (score for the cook! You get to eat this little bit of avocado that you HAVE to remove). Basically if your pit is really large you can remove less but if you have a small pit, take a tablespoon full of the avocado out.

5Turn each avocado halve on its side and slice a small amount off of the 'bottom' half of the avocado (the side with the skin still on) so that when you lay the avocado back down it will not wobble.

6Set the avocado halves on skin down on the baking sheet, evenly spaced.

7In a small bowl, crack one egg. Slide the egg into one of the avocado halves and repeat until each of the halves are filled. (4 halves for 4 eggs)

8Sprinkle with salt and freshly ground pepper. Bake @ 400 degrees for 12 -15 minutes or until your desired doneness.

9Remove from the oven, set on your serving plate and top each egg filled avocado half with cilantro, a squeeze of lime and Sriracha.
